Jerky samples are submitted to Analytical Laboratories for testing for pathogens as well as for moisture content. It's that fine balance of flavor and moisture content that makes our beef jerky so soft and easy to chew. We sell no shoe leather here! This is one of our biggest selling points. A portion of every sale goes to organizations like Straight Street, New Horizons, First Step, B.A.C.A., and to churches to aid in their youth programs. Our gift shop will be posting the fund raising efforts that we are participating in each month. We also work with churches, schools and civic groups organizing fund raisers through jerky sales.
